Pork Chop Suey


Pork chop suey is a Chinese dish primarily made up of mixed vegetable with meat like chicken, fish, beef, shrimp or pork, added for extra flavor. Chopsuey is widely believe to be an American-Chinese immigrants creation, and not an authentic Chinese dish. They said, Chinese farmers was inspired to cook a stir-fried vegetables known now as chopsuey and ate them after a long day working in the fields.

Ingredients :

1/2 lb. pork, cut into thin strips
1 tsp. soy sauce
1 tsp. oyster sauce
salt and pepper, to taste
1 tsp. cornstarch

1 to 1-1/2 cup chicken broth (or water)
2 tbsp. cornstarch
2 tbsp. oyster sauce
1/2 tsp. sugar

1/4 cup vegetable oil
3 cloves garlic, minced
1 onion, chopped
1-1/2 cup baby carrots, halved
3 stalks celery, cut diagonally into 1 inch long
1/2 cup chopped red bell pepper
15 to 20 pieces snow peas, trimmed
1 can slice mushroom, drained
1 can miniature cut cobs of corn, drained

Cooking Procedures :

Cut the pork into thin strips. Combine soy sauce, oyster sauce, salt and pepper, and cornstarch. Stir to blend and then add the meat. Marinate for 10 to 15 minutes. Set aside.
In a small bowl, whisk together broth, cornstarch, oyster sauce and sugar. Stir to blend and then set aside.
Heat oil in a wok (or deep skillet) over medium heat. Fry pork for about 3 to 5 minutes. Add garlic and onion until soft and translucent. Stir in baby carrots for about a minute. Add the rest of the vegetables, stir-frying for a minute or two after each addition.
Add the cornstarch mixture. Bring to a boil. Lower the heat and continue stirring until well blended and sauce thickens. Correct seasonings.
Immediately remove from heat after heated through. Transfer to a serving platter. Serve hot the chop suey dish.

Tinolang Manok (Chicken Ginger Stew with Vegetables)


Tinolang Manok or Nilagang Manok (Chicken Ginger Stew with Vegetables) recipe is the filipino food dish that I was planning to cook when I arrived here in Canada. Tinolang manok recipe is a filipino food that is easy to cook but during that time, I don’t know where to buy filipino ingredients specially papaya, sayote, chili leaves or malunggay and I thought that I couldn’t cook filipino food dishes anymore.

But as I got familiar to places here, I’ve notice that cooking in Canada is not that difficult, as I have taught before. We even travel for an hour from our place just to buy filipino food ingredients. These filipino food ingredients are usually sold in Asian stores but some are not that often displayed. So, looking for a substitute is my next best option. Like this tinolang manok recipe, when I went to my favorite Asian store, the frozen malunggay or the chili leaves that I notice before are not there to be found, so I just used the spinach because they are abundant and it was recommended by a friend of mine.

Cooking away from your native country is challenging but enjoyable, especially when you are with your love ones. Happy Cooking!

Ingredients :

1 lb. chicken, cut into serving pieces (or any choice cuts of your liking like thighs, drumsticks or wings)
1 thumb-sized fresh ginger root, cut into strips
2 cloves garlic, crushed
1 onion, chopped
2 tbsp. patis (fish sauce)
salt, to taste
4 to 5 cups water (or rice water – 2nd washing)
2 to 3 sayote (chayote squash), quartered (or green, unripe papaya or potatoes)
1 cup sili (chili) leaves or malunggay or substitute 1/2 lb. spinach
vegetable oil

Cooking Procedures :

In a medium saucepan, heat oil over medium heat. Sauté ginger and garlic until fragrant. Add onions, stir-fry until softened and translucent.
Add chicken cuts. Cook for 3 to 5 minutes until chicken colors slightly. Season with patis and salt.
Pour in water (or rice water, if using). Bring to a boil. Lower the heat and let it simmer until chicken is half-done. Add in chayote (or papaya or potatoes, if using). Continue simmering until chicken and vegetable are tender. Correct seasonings and then addsili leaves or malunggay or substitute. Stir to combine until well blended. Remove from heat.
Let stand for a few minutes to cook the green vegetables. Transfer to a serving dish and serve hot.

Pinakbet or Pakbet (Meat Vegetable Stew with Shrimp Paste)


Pinakbet or Pakbet is one of the Filipino recipes that I love to cook and a dish that my hubby likes to eat. He’s very fond of eating any kind of food recipes that contain vegetables. No matter how it was prepared and cooked. It is very easy for him when it comes with vegetables.

Growing up until college, I’m very picky when it comes with vegetables. I’m not fond of eating vegetables until I’ve met my hubby. He taught me how to eat and the benefit of eating this type of food. Slowly, I’ve learned to love and appreciate the taste of vegetables like this pinakbet. I remember then eating out on a date he preferred to choose food dishes with vegetables. He wanted me to learn to eat vegetables. It sounds funny but its true. Being with him, with the type of food he eats, I have no choice but to learn to love and appreciate the kind of foods he eats, specially this Filipino food.

Learning on things that my hubby loves especially on foods is what I enhanced the most. As the saying goes- “The way to a man’s heart is through his stomach”. I’ve got the chance to learn more of vegetables recipes here in Canada. Away from home, we missed a lot of filipino comfort food. Pinakbet, an authentic Filipino dish is one of them. I also like Pork Chopsuey,Repolyo Guisado (Sautéed Cabbage), Togue Guisado (Sautéed Bean Sprouts), Sayote Guisado (Sautéed Chayote) and many other Filipino veggie dishes.

Thank God that there are Asian stores here where we can find some of our vegetables grown back home.

Ingredients :

1/2 lb. pork, sliced
2 tbsp. vegetable oil
3 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped
1/2 squash, cubed
2 cups sliced okra
2 cups 1-1/2 inch long cut sitaw (yard long beans)
2 eggplants, sliced
1 ampalaya (bitter gourd and/or bitter melon), sliced
1 to 1-1/2 cup water
2 to 3 tbsp. bagoong alamang (salted shrimp paste)

Cooking Procedures :

In a large, deep skillet (or casserole), heat oil over medium heat. Cook pork until it turns slightly brown.
Stir in garlic, onions and tomatoes. Sauté for a few minutes until tomatoes wilted.
Add squash and okra, stir-fry for a minute or two and then add the rest of the vegetables. Gently stir to combine.
Pour in water and add the bagoong alamang, and bring to a boil.
Lower the heat and simmer covered over low heat until vegetables are tender. Be sure not to overcook it. You may wish to correct the taste by adding a little bit of bagoong alamang. Gently stir to blend.
Immediately remove from heat. Transfer to a serving dish. Serve hot.

Munggo Guisado (Sautéed Mung Beans)


Munggo (mung beans) can be found in any Asian Store. It’s one of the staples in most Asian country. Guisado (sautéed) as what we Filipino are calling mostly of our food because of the way we cook it.

In our household, I see to it that I have a variety of Filipino food in our table every week. My desire is to let my children continue to like and love to eat filipino food like we do back home. It is in a way of not to be homesick even with our food. And I'm thankful that they still do!
Ingredients :

1 cup munggo (mung beans)
3 cups water
1 tbsp. vegetable oil
1/2 lb. pork, sliced
2 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped
2 pcs. Chinese sausage, cubed (optional)
2 cups water or broth
1 tbsp. patis (fish sauce)
salt to taste
1 cup ampalaya leaves or substitute spinach or watercress

Cooking Procedures :

Boil mung beans in water until soft and easily mashed. Set aside.
In a pan, heat oil. Cook pork until it turns slightly brown.
Add garlic, onions and tomatoes. Sauté for a few seconds until tomatoes wilted.
Stir in Chinese sausage (if using) and continue cooking for another 1-2 minutes.
Pour in water or broth and add boiled mung beans.
Season with patis and salt to taste. Bring to boil and let it simmer until thick.
Add ampalaya leaves or substitute. Cover and remove from heat. Serve hot.

Lumpia Recipe (Lumpia Shanghai)


In Filipino, lumpia are eggrolls that are deep-fried like a wrapped stick of meat. Lumpia is aspring roll filled with ground or finely mince of pork, beef or vegetables then served it with sweet and sour sauce. Sometimes I call this recipe lumpia shanghai.

This lumpia recipe or lumpia shanghai is one of the filipino recipes that I usually make, whenever we have a party or get together with friends, especially filipino friends, at home. One time, I was busy cooking filipino recipes, and one of them is this lumpia and my friend arrive early and help me in the kitchen. She notices that I my lumpia wrapper won’t stick together whenever I cook. I’ve tried everything from water, to egg wash and other type of paste but still no avail, the wrapper still broke loose.

Since she is also a good cook; she gave me the technique in making these wrapper sticks together. And guess what she told me, just used the egg white as a paste in binding this wrapper together. And it works! Since then, my filipino lumpia shanghai servings looks better and taste good.

Ingredients :

1 lb. ground pork
1 cup chopped shrimps
1/4 cup finely chopped onions
1/2 cup finely chopped carrots
2 whole eggs
3 tbsp. soy sauce
3 dashes of sesame oil
salt and pepper, to taste
lumpia wrapper
vegetable oil, for frying

Cooking Procedures :

In a bowl, combine all ingredients. Mix until well blended.
Wrap into thin rolls in lumpia wrapper. Fry in deep hot oil.
Drain on paper towels. Transfer to aserving platter. Serve with your favorite catsup or make your own Sweet and Sour Sauce recipe.

Turon Saba (Banana Plantain Rolls in Sugar)


Turon named in Tagalog, is a typical Filipino snack. Turon has many varieties that consists of plantain and jackfruit wrapped in a lumpia (spring roll) wrapper, dipped in brown sugar and then fried. This is somewhat resembles banana spring rolls.
Ingredients :

1/2 dozen ripe saba (banana plantain)
1 cup chopped langka (jackfruit)
1/2 cup brown sugar
lumpia (spring roll) wrappers
oil, enough for deep frying

Cooking Procedures :

Cut banana in half, and cut each half into 3 pieces. Roll slightly each banana piece in sugar.
Place coated bananas on top of eachlumpia wrapper (this will depend to your liking on how many pieces of banana slices for each wrapper), spread with choppedlangka (jackfruit), carefully wrap and roll into shape of egg roll. Seal the ends with water or egg white.
Fry in deep medium-high oil. Sprinkle 1/8 teaspoon of sugar over your turon. This will caramelize and stick to your turon. Flip yourturon to coat evenly with caramelized sugar. Fry until golden brown and crisp.
Remove from pan and set over wax paper for a couple of minutes and then enjoy!

Pancit Palabok


Pancit Palabok is a Filipino noodle dish of Chinese origin. It is called palabok because the thin rice noodles are covered with a bright colored orange shrimp-flavoured thick sauce. Aside from the sauce, pancit palabok has a toppings of prawns, wedge cut hard-boiled eggs, chicharon (pork cracklings), flaked tinapa (smoke fish), fried garlic and chopped of green onions. Then finished it with squeeze calamansi (Philippine Lemon) all over.

Ingredients :

8 cups water
1 cup mongo sprouts
1 lb. pancit bihon (rice noodles) or palabok noodles

Palabok Sauce

1/4 cup atsuete (annatto) seeds, soaked in
1/4 cup water
2 cups shrimp juice
6 tbsp. all-purpose flour
1/2 cup water
salt and pepper,to taste

Toppings

1 cup cooked pork, cut into strips
2 pcs. fried tokwa (beancurd), cubed
1/2 cup flaked tinapa (smoked fish)
1/2 cup pounded chicharon (pork cracklings)
2 eggs, hard-boiled and sliced into wedges
1/2 cup shrimps, boiled and shelled
1/2 cup finely chopped green onions, to garnish
1 tbsp. fried garlic, to garnish
kalamansi (Philippine lemon)

Cooking Procedures :

Boil water in a pot. Place mongo sprouts in a strainer and then add the noodles. Drop strainer into boiling water. Cook sprouts and noodles until soft. Drain well. Pour noodles with sprouts in a large platter.
Prepare palabok sauce: Strain atsuete water. Add to shrimp juice and cook in a saucepan. Disperse flour in water and add to the pan. Bring to a boil and stir constantly. Season to taste. Remove from heat and pour over cooked noodles.
Top with pork and tokwa. Sprinkle with tinapa and chicharon. Arrange egg slices and shrimps on top. Garnish with green onions and fried garlic. Serve with kalamansi.

Adobong Baboy (Braised Pork in Tangy Sauce)


Adobo (a famous filipino dish cooked in vinegar and soy sauce) is a filipino food favorite. May the recipe be done with pork, chicken or a combination of both. It could be also good with beef. There are lots of variations in cooking adobo recipe, which I have listed below after the adobong baboy recipe.

Filipinos (Pinoy –as we call ourselves) love garlicky and tangy flavors of food dishes. That's why adobo recipe was created. Just by smelling the aroma of it, you'll surely feel hungry or even salivate.

Filipino food like this adobong baboy, is one of my favorite recipe cooking list.

Ingredients :

1-1/2 lb. pork, cut into serving pieces
3 cloves garlic, crushed
1/3 cup vinegar
3 tbsp. soy sauce
1 bay leaf
salt to taste
1/4 tsp. pepper or 1 tsp. peppercorns
1 tbsp. sugar (optional)
1/2 cup water
oil, for frying

Cooking Procedures :

Combine all ingredients in a big pot except the oil and let stand for at least 30 minutes.
Place pot over medium heat and bring to a boil.
Lower the heat and simmer covered until meat is tender for about an hour (checking occasionally for the water not to get dry, just add a little water each time you see its almost dry up). You may adjust the seasoning according to your taste and liking. Drain and reserve sauce. Set aside.
Meanwhile, heat oil in a pan over medium heat. Fry the meat until lightly brown on all sides. Set aside and keep warm.
Pour off all remaining oil from the pan. Pour in back the meat and reserve sauce. Mix for about a few minutes while scraping up the bits on the bottom of pan.

Nilagang Baboy (Boiled Pork with Vegetables)


Nilaga in filipino means ‘boiled’. Nilagang Baboy is another filipino food recipe that is easy to make that you just throw everything in the pot and let it cook until tender. It can be with pork or beef of any kind you like and just add any vegetables of your choice.

Corns and ripe saba (banana plantain) is also good in this dish. You may or may not add pork and beans — it’s up to you if you’ll like it thickened or just a clear soupy dish. You can even add a thumb-size ginger for a pungent flavor. Nilaga is good in any kind of weather.

My family love nilaga. They like soupy kind of food dish that they quickly finish their meal. I remember that we used to have this dish (we call it nilat-an in our dialect) during Sunday’s lunch. We always had our get-together with my in-laws every weekend.

Preparing this nilagang baboy (boiled pork with vegetables) reminds me of my family back home.

Ingredients :

1 lb. pork (choices of belly, hocks, neck or any bony parts of pork), cut into serving pieces
5-6 cups water
3 cloves garlic, crushed
1 onion, quartered
2 green onions (scallions), sliced into 1” long
1/4 tsp. peppercorn
salt to taste
2 eddoes- also known as taro or gabi, quartered (optional)
2 potatoes, quartered
1 can pork and beans
pechay (bok choy) or cabbage leaves

Cooking Procedures :

Place pork in a big pot and let it covered with water. Bring to a boil. Lower the heat and let it simmer until pork is tender for about an hour.
Remove all the resulting scum that will rise to the top of the pot.
Add crushed garlic, sliced onions, scallions, peppercorn and season with salt.
Add quartered eddoes (if using) and potatoes. Cook until tender.
Add the pork and beans. Simmer for 5 minutes. Correct the seasoning.
Add pechay or cabbage leaves. Do not overcook the green vegetables.
Remove from heat. Serve hot.

Chicken Curry (Pinoy Style)



This curry recipe is one of my favorite Filipino chicken recipes in the database. In my family, chicken curry is a dish that we usually make during birthdays and parties back in the Philippines. But here in Canada, I continue cooking this chicken dish during special occasions because this is one of my famous Filipino recipe that my family and friends loves. They said that when they start eating this chicken curry, they feel a little burning sensation in their mouth and wow really spicy delicious.

Well, many countries had their own version of chicken curry but for me, the Filipino chicken curry is still the best.

Ingredients :

2-3 tbsp. oil
3 potatoes, peeled, quartered and fried
1 lb. chicken, cut into serving pieces
3 cloves garlic, minced
1 large onion, quartered
1 tbsp. patis (fish sauce)
3 tbsp. curry powder
salt and pepper
1 cup water
1 red bell pepper, cut into big squares
1 green bell pepper, cut into big squares
3 celery stalks, cut into 1-1/2” long
1 cup coconut milk or evaporated milk

Cooking Procedures :

Pan fry potatoes. Set aside.
In the same pan, fry chicken pieces and brown a little.
Add garlic and onion. Sauté for a few minutes until soft.
Pour in patis and season with curry powder, salt and pepper. Stir for 2 minutes.
Add water. Cover and bring to a boil. Lower the heat; add celery, bell peppers and fried potatoes. Simmer for 3 minutes or until half done.
Add milk and stir occasionally. Cook for another 7 minutes (or lesser when using evaporated milk because the liquids will curled).
Remove from heat. Serve hot.

Tortang Talong (Eggplant Omelet)



Ingredients :

2 to 4 talong (eggplants), average size
2 to 3 eggs, beaten
salt and pepper, to taste
oil, for frying

Cooking Procedures :

Broil eggplants until tender (the skins are charred and blister appears).
Once cool, peel off the skins of the eggplant and retain the crown and the stem. Gently flatten its meat by using the back of a fork. Set aside.
In a bowl, beat the eggs and season with salt and pepper.
In a skillet, heat oil over medium heat. Dip each eggplant, one at a time into the egg mixture. Gently bring the bowl near the skillet and tip, lowering the eggplant onto the heated oil.
Fry until golden brown on one side, then turn and brown the other. Drain on paper towels. Keep warm and serve.
